Dubai is home to innovative Indian restaurants, from homegrown brands to MICHELIN-starred marvels. Now, Singapore’s Revolver Restaurant is making its way to the city.
Culinary Arts Group is behind the expansion of Singapore’s Revolver. The restaurant’s name reflects how the concept revolves around the charcoal grill, brazier and tandoor. At its core lies a dramatic open-fire kitchen, where adventurous diners are treated to a front-row view of a fiery, live-cooking spectacle. Here, flames meet world-class ingredients to create dishes infused with bold spices and South Asian-inspired techniques. For those seeking an al fresco escape, the elevated outdoor terrace offers a vibrant yet intimate setting, enveloped in lush greenery.
At the helm is Chef Jitin Joshi, a globally acclaimed talent with 27 years of experience in Michelin-starred kitchens, including his role as Executive Chef at London’s now two-Michelin-starred Gymkhana. Known for his mastery of French techniques and deep-rooted passion for Indian flavours, Chef Jitin pushes boundaries to deliver a truly disruptive dining experience. His culinary artistry has earned him the privilege of cooking for royalty and icons like David Beckham, Ed Sheeran, King Charles, Mick Jagger, Priyanka Chopra and Roger Federer.
The spice and fire-driven menu is a tribute to South Asia’s rich culinary heritage, crafted with world-class ingredients and elevated through innovative techniques. At the heart of it all lies the charcoal grill, brazier, and tandoor, delivering smoky, bold flavors in every bite. Standout dishes include the Signature Smoked Chutoro Tartare, a deeply smoky creation inspired by Northern India, featuring fermented mustard leaves, preserved bamboo shoot, akuni, and dried anchovies; the Burrata Street Style, a playful take on Chinese Dan Dan noodles with sesame peanut sauce, Youtiao (savoury churros); and the Lobster Manchurian, a signature classic bursting with umami and fiery spices, with its roots in Tangra, Kolkata.

Culinary Arts Group will bring a range of restaurants to Dubai. The group will open Maison Dali in The Opus by Omniyat. The name is a nod to the Spanish artist Salvador Dali, and it will merge Japanese ingredients and techniques with Mediterranean flavours.

The Opus has become one of Dubai’s top dining destinations. It is home to Japanese hotspot ROKA, homegrown favourite The Maine Land Brasserie, and hip nightlife hangout Salmon Guru.
